"Wow! A monumental '61 from Cheval was uncorked at a recent dinner with a client. This is an absolutely stupendous wine, with lots of brown sugar, fig, plum, blackcurrant jam and prune fruit character overlaid with mineral, cedar, and black truffle, the wine showed a perfect evolution. With time, deeper soy/miso/beef bouillon notes appeared, but never dominated the wine. On the palate it was fat and long - wonderfully balanced, still very forceful and long.
