Valdespino, Palo Cortado Macharnudo 2000
Sherry
Valdespino is paying a special tribute to its origins in the Macharnudo vineyard by bottling this extra limited Single Cask Palo Cortado Vintage from 2000, especially for Christie’s. At the end of August Palomino grapes were harvested in a small parcel at the highest point of the Pago Macharnudo Alto, where the vines range in age from 35 to 55 years old, and were brought to the vinification winery. With an optimum level of ripeness, they were lightly pressed, to obtain a very clean delicate must which was then transferred into American oak Sherry butts dedicated exclusively to replenishing the soleras of our single vineyard Sherries and the alcoholic fermentation began. Our winemaking team carefully tracked the evolution of every butt during the fermentation of these Palomino wines. When fermentation was completed all the members of the team were agreed that one particular butt showed outstanding finesse and complexity. Autumn came and November brought the first cold weather allowing the natural decantation of the lees and once again this butt confirmed what everyone had expected: it had the potential to become a great wine. With this in mind it was fortified to 15°and it naturally began life as Fino, forming a very subtle film of flor yeast on the surface. As the time went by the flor failed to develop any further. The butt was tasted and analysed a few times and the winemaking team clearly identified Palo Cortado characteristics along with the virtual disappearance of the flor. At this stage it was decided to further fortify it to 17º. Being a Vintage implies that the butt must be sealed under the supervision of the Consejo Regulador (Sherry Regulatory Council). The wine had also become much more concentrated as a result of evaporation, causing considerable reduction in its liquid volume, and the alcohol content had increased remarkably. In June 2017 we decided to bottle 540 halves (only one cask) of our Macharnudo 2000 Vintage Palo Cortado Single Cask. All bottles in this super limited edition are hand numbered and presented in individual gift boxes.
Tasting note: It has a dark golden colour with copper highlights. Pronounced roasted hazelnut and straw aromas with a subtle mineral background. It is dry and lightly saline yet round and full bodied with a long, complex, slightly smoky finish. This wine should be enjoyed slightly chilled or at cellar temperature in a white wine glass. It is delicious accompanied by cured meats, hard cheeses, tuna teppanyaki or intense soups.
